In Espresso101.com, an online newsletter for the coffee industry, Milletto writes: “Your goal is to hire, train and retain great employees. It costs you time and effort to bring on new people and get them up to speed. To keep the employees who can think fast, solve problems and welcome every guest, you have to do more than just choose them with care. You must train them well and pay them fairly.” Sound advice indeed. Have a second cup.
